- Get Kiwi jelly
- Get 1 kiwi
- Provide 10 ml sugar
- Provide 60 ml water

- Get 300 g watermelon

- Kiwi: Sponge gelatine in 20ml water. Chop kiwi roughly. In a pot add kiwi, sugar and water. Bring to a boil for 2 minutes. Blend kiwi with stick blender. Add gelantine and mix until gelatine is completely melted. Pour into glass and set overnight in the fridge.
- Gin: In a pot bring tonic to a boil. Remove from heat and whisk in gelatine and gin until dissolved. Let cool. Once cold slowly pour over kiwi jelly and let set in the fridge.
- Watermelon: Melt gelatine in warm water. Blend watermelon and strain. You should have between 125-150ml juice left after straining. Mix gelatine into watermelon. Pour over gin jelly and set overnight in the fridge.
Remove any bubbles from the jelly mixture, then pour it into the watermelon. Chill in the fridge until firm. Purée the flesh using a hand blender or in a liquidiser.
