- Get 150 ml brandy or rum
- Get 500 g dried fruit
- Get 100 g glace cherries
- You need 250 g brown sugar
- You need 175 g butter/margarine

- In a saucepan, put butter, sugar, 150ml rum or brandy (water can be used as an alternative) and mixed fruits. Set on medium heat to simmer for 10 minutes. Cool for 15 minutes.
- Beat eggs and pour into sugar/fruit mixture. Stir. Add baking powder and mixed spice into flour. Pour into sugar fruit mixture and stir until mixed in.
- Leave cake in the pan to cool for at least 20 minutes. Turn out from pan and allow to cool. Wrap cake and feed with brandy once a week.
- Spoon batter into pan and bake until cake is done (when a toothpick inserted in the middle comes out clean)
